Pesto and Walnut Crusted Salmon

Serves 2:

    Ingredients:

    • 2 medium salmon darnes
    • 2 tbsp of pesto
    • 100g of cherry tomatoes
    • 100g of broccoli
    • 15g of chopped walnuts
    • 2 tbsp of real butter
    • 30g of grated cheese

    Instructions:

    1. Chop the cauliflower and broccoli into bite size pieces and place in a steamer for 8 – 10 minutes.
    2. Place the salmon and the cherry tomatoes in the oven and roast for 10 minutes before removing and covering each salmon darne with 1 tablespoon of pesto and sprinkle with walnuts, place back in the oven for 8 minutes.
    3. Once the broccoli and cauliflower is tender, remove from the steamer, add butter and put in an oven dish with cheese sprinkled on top.
    4. Season with salt and pepper and place on the bottom shelf to bake for 6 – 8 minutes, removing once the salmon is cooked and it’s ready to serve.
    5. Serve immediately with pumpkin seeds sprinkled on top.
