King Prawn Tomato and Garlic

Serves 1:

    Ingredients:

    • 150g king prawns
    • 150g courgette spaghetti
    • 50g broccoli
    • 2 cloves garlic
    • 150g passata
    • 3 teaspoons fresh basil
    • 1 tablespoon parmesan cheese
    • 1 tablespoon extra virgin coconut oil
    • 1 tablespoon butter

    Instructions:

    1. Firstly, make the courgette spaghetti using a spiraliser, or buy prepared from the fridge section of most supermarkets.
    2. Make the tomato sauce by adding butter, passata, garlic (crushed) and basil (chopped) to a pan and heat until near boiling. Add in the prawns and set to the side to marinate.
    3. In a large pan, melt the coconut oil on medium to high heat. Once melted, add the broccoli and cook for 5 minutes. When the broccoli has softened, add in the courgette spaghetti and cook for 2 minutes.
    4. Add the prawns and tomato sauce in with the courgette and broccoli and cook for an additional 3 minutes.
    5. Serve immediately on a heated plate and sprinkle with parmesan.
