Courgetti Bolognese

Serves 1:

    Ingredients:

    • 1 onion
    • 1 garlic clove
    • 75g celery stalks
    • 700g ground beef
    • 75g butter
    • 2 tablespoon tomato paste
    • 400g crushed tomatoes
    • 1 tablespoon dried oregano or dried basil
    • 1 tablespoon worcestershire sauce
    • salt and pepper to taste
    • spiralised courgetti noodles

    Instructions:

    1. Chop the vegetables finely and saute in butter or olive oil until soft and add the ground beef.
    2. Saute on high heat until everything has turned a nice colour. Add the crushed tomatoes, tomato paste and herbs stir and let simmer on medium high for 15 minutes.
    3. Reduce the heat further and gradually add water if the worcestershire sauce is getting too thick. Let simmer for 20 minutes or more.The longer the sauce is allowed to simmer,the better the flavour.
    1. 4. Heatup a frying pan and toss the courgetti noodles around quickly in butter.A minute is enough to keep them from going too soft.
    2. 5. Taste the sauce and add more salt and pepper if needed.
    3. 6. Serve the noodles warm with the hot sauce on top.Finish with a good grating of parmesan cheese (optional).
