Chicken Garam Masala with Cauliflower Rice
Serves 1:
- Carbs: 16 grams

- Prep time: 5 minutes
- Cooking time: 15-20 minutes
Ingredients:
- 150g chicken breast
- 150g cauliflower rice
- 70g red bell pepper
- 75mls creme fraiche
- 1-2 teaspoon garam masala spice blend
- ½ tablespoon fresh parsely
- 1 tablespoon extra virgin coconut oil
Instructions:
- Preheat the oven to 4000F(2000C).
- Cut the chicken breast lenghwise and saute on medium-high heat with some coconut oil until the meat has turned a nice color.
- Add half the gram masala and stir well.
- Place the chicken including the juice in a baking dish.
- Mix creme fraise and the sliced bell pepper with the rest of the garam masala.
- Spread the mix over the chicken, cover and bake in oven for about 15 minutes.
- Just before the removing the baking dish from the oven, add the cauliflower rice to a separate saucepan with the remaining amount of coconut oil and cook for 2 minutes
- When the rice has softened, serve on a heated plate with the chicken garam masala, garnish with parsley and serve.

- When the rice has softened, serve on a heated plate with the chicken garam masala, garnish with parsley and serve.
