Stuffed Mini Peppers
Serves 1:

Ingredients:
- 2 mini peppers
- 50g cream cheese
- 30g cooked ham/rasher (unsmoked)
- 50g grated cheese
- 1/4 tablespoon mild chilli paste
- 1/2 tablespoon extra virgin olive oil
- 1/4 tablespoon fresh thyme
Instructions:
- Set the oven to 400 F(200 C). Split the bell peppers lengthwise and remove the core.
- Chop the ham and fresh thyme finely.
- Mix the cream cheese, chilli paste and oil together in a small bowl. Add the ham and thyme and stir until smooth.
- Add the batter to the bell peppers, sprinkle shredded cheese on top and place in a greased baking dish.
- Bake in the oven for 10-15 minutes or until the cheese melts and begins to brown.
