Stuffed Mini Peppers

Serves 1:

    Ingredients:

    • 2 mini peppers
    • 50g cream cheese
    • 30g cooked ham/rasher (unsmoked)
    • 50g grated cheese
    • 1/4 tablespoon mild chilli paste
    • 1/2 tablespoon extra virgin olive oil
    • 1/4 tablespoon fresh thyme

    Instructions:

    1. Set the oven to 400 F(200 C). Split the bell peppers lengthwise and remove the core.
    2. Chop the ham and fresh thyme finely.
    3. Mix the cream cheese, chilli paste and oil together in a small bowl. Add the ham and thyme and stir until smooth.
    4. Add the batter to the bell peppers, sprinkle shredded cheese on top and place in a greased baking dish.
    5. Bake in the oven for 10-15 minutes or until the cheese melts and begins to brown.
