Cheesy Egg and Chorizo Bake

Serves 2:

    Ingredients:

    • 4 eggs
    • 1 cup of spinach
    • 60 grams of (nitrate free) chorizo sausage chopped up into small pieces
    • 400 grams of passata or 1 tin of chopped tomatoes
    • ½ ball of mozzarella to garnish
    • 1 small red onion
    • 1 tbsp olive oil
    • 1 tsp of oregano

    Instructions:

    1. Set your pan to a medium heat and add oil. Chop spinach, onion and sausage.
    2. Add onion and chorizo and fry for 2 minutes or so, then add spinach.
    3. Add passata once spinach has wilted and stir to heat thoroughly.
    4. When sauce begins to bubble, reduce to low heat and make 4 wells for the egg yolks and cover the pan with a lid or plate and allow to cook for 4 to 5 minutes, ensuring the eggs have cooked through.
    5. Once the eggs have set, remove from heat, add shredded cheese and enjoy.
