Prawn Cocktail
Serves 1:

Ingredients:
- 210g cooked prawns
- 70g of lettuce
- 30mls mayonaisse
- ½ tablespoon of low sugar ketchup
- chilli powder to taste
Instructions:
- Firstly prepare the prawns-if using frozen cooked prawns, defrost as instructed. Allow the water to drain off then dry with some kitchen paper.
- Mix the mayonaisse, low sugar ketchup and chilli powder together then fold thorough the prawns.
- Wash and slice the lettuce, dry with kitchen paper and spread out on a plate.
- Spoon the prawn mixture on top of the lettuce and enjoy!.
