Chia Pudding

Serves 1:

  • Nutritional info per serving:
    • Carbs:                   12 grams
    • Fats :                    36 grams
    • Protein:                 9 grams
    • Prep time:            5 minutes
    • Cooking time:        4 hours / overnight

    Ingredients:

    • 180mls tinned coconut milk
    • 2 tablespoon chia seeds
    • ½ teaspoon vanila extract

    Instructions:

    1. Mix all the ingredients together in a glass bowl or jar.
    2. Cover the bowl and place in the fridge to let gel overnight (or for at least 4 hours). Before eating, check to be sure the pudding has thickened and the chia seeds have gelled.
    3. Serve with some fresh or frozen berries
