Strawberry Ice Cream
Serves 4:

Ingredients:
- 70g strawberries
- 160g cream cheese
- 50g coconut oil
- 3 tablespoons xylitol
- 1 teaspoon vanilla extract
Instructions:
- Melt Xylitol in a pan with two tablespoons of water until it runs clear.
- In a blender, combine the strawberries, cream cheese, coconut oil and vanilla extract.
- Add in melted Xylitol and blend further until smooth.
- Freeze for 2 hours and enjoy.
