Lemon Sherbet Melts

Serves 10:

    Ingredients:

    • 120 grams of cream cheese
    • 100 grams of coconut oil
    • 100 grams of unsalted butter
    • 2 tsp of vanilla extract
    • Juice and zest of 1.5 lemons
    • 2 tbsp of Xylitol

    Instructions:

    1. Melt the coconut oil and the butter in a large bowl placed over a saucepan of boiling water.
    2. Once the mix has melted add in the lemon zest and juice, vanilla, cream cheese and xylitol. Use a hand blender or smoothie maker to combine until a mouse like consistency is achieved.
    3. Fill a silicone chocolate mould with the mix.
    4. Store in a freezer and allow 2-3 minutes to thaw slightly before serving.
