Lemon Cheesecake Ice Cream

Ingredients:
- 250g mascarpone cheese
- 50g xylitol
- 50g ground almonds
- Lemon juice (2 tablespoons)
Instructions:
- Melt xylitol in a pan with two tablespoons of water until it runs clear.
- Add mascarpone, ground almonds, lemon juice and stir into a paste.
- Freeze for 1 hour and serve.
