Cinnamon Vanilla Apples

Serves 4:

    Ingredients:

    • Vanilla sauce
    • 120mls heavy whipping cream
    • 1/2 teaspoon vanilla extract
    • 2 tablespoons butter
    • 1 egg yolk
    • 480mls heavy whipping cream
    • Cinnamon apples
    • 3 tablespoons butter
    • 3 apples
    • 1 teaspoon ground cinnamon

    Instructions:

    1. Bring the first measurement of heavy whipping cream (120 mls), butter and vanilla to the boil in a small saucepan. Lower the heat and let simmer for 5 minutes or more until the sauce turns creamy.
    2. Remove from the heat and add the yolk while whisking vigrously. Place in a cool place and let cool completely. This far you can prepare the day before.
    3. Whisk the second measurement of heavy whipping cream (480 mls) in a bowl and mix into the cold mixture.
    4. Place in the refrigerator for another 30 minutes or more. You can place them in the dessert bowls to make the vannila sauce thicken up faster.
    1. Wash the apples and peel them if you want. The peel adds colour, flavour and texture.
    2. Core the apple and slice thinly. Heat the butter in a frying pan and brown the slices until golden. Add cinnamon towards the end.
    3. Serve the apple slices warm with the vanilla sauce.
