Chia and coconut Vanila Pudding
Serves 4:
- Carbs: 3 grams
- Fats : 10 grams
- Protein: 2 grams
- Prep time: 10 minutes
- Cooking time: 4 hours/overnight
Ingredients:
- 180mls coconut milk
- 2 tablespoon chia seeds
- ½ teaspoons vanila extract
Instructions:
- Mix all the ingredients in a glass bowl or jar.
- Cover and place in the fridge to allow to gel overnight (or for at least 4 hours). Before you dig in, check to be sure the pudding has thickened and the chia seeds have gelled. This dessert/breakfast sets best when allowed to cool overnight.
- Serve the pudding with cream, coconut milk or some fresh or frozen berries.
