Chia And Coconut Vanilla Pudding

Chia and coconut Vanila Pudding

Serves 4:

  • Nutritional info per serving:
    • Carbs:                    3 grams
    • Fats :                    10 grams
    • Protein:                  2 grams
    • Prep time:            10 minutes
    • Cooking time:        4 hours/overnight

    Ingredients:

    • 180mls coconut milk
    • 2 tablespoon chia seeds
    • ½ teaspoons vanila extract

    Instructions:

    1. Mix all the ingredients in a glass bowl or jar.
    2. Cover and place in the fridge to allow to gel overnight (or for at least 4 hours). Before you dig in, check to be sure the pudding has thickened and the chia seeds have gelled. This dessert/breakfast sets best when allowed to cool overnight.
    3. Serve the pudding with cream, coconut milk or some fresh or frozen berries.
