Cherry and Dark Chocolate parfait

Serves 4:

  • Nutritional info per serving:
    • Carbs:                    11 grams
    • Fats :                     5 grams
    • Protein:                  7 grams
    • Prep time:            10 minutes
    • Cooking time:        12 minutes

    Ingredients:

    • 250g Greek yoghurt
    • 12 cherries, pitted
    • 4 tablespoons flaked coconut
    • 1 teaspoon vanilla extract
    • 50g Greek yoghurt & 10 cherries (for layers)
    • Grated dark chocolate (optional)

    Instructions:

    1. Add 250g Greek yoghurt, 12 cherries and vanilla extract to a blender and blend for 20 secs.
    2. Add in flaked coconut and stir in with a spoon.
    3. Spoon this mixture into serving glass.
    4. Add another layer of Greek yoghurt into glass.
    5. Top this layer with pitted cherries.
    6. Repeat steps 3, 4 and 5.
    7. Sprinkle the top with grated dark chocolate (optional) and serve.
