Soda Bread

Serves 6:

  • Nutritional Info per slice:
    • Carbs:              2 grams
    • Fats :               13 grams
    • Protein:            6 grams

    • Cooking time:       25-30 minutes

    Ingredients:

    • 2 tablespoons of sour cream
    • 2 large eggs
    • ½ tablespoon apple cider vinegar
    • 15 grams of coconut flour
    • 1 teaspoon baking powder
    • 1 teaspoon stevia or xylitol
    • 180 grams of almond flour
    • 1 teaspoon of salt

    Directions:

    1. Grease bread tin and set aside
    2. Preheat oven to 180 C/350 F
    3. Mix almond flour, coconut flour, baking powder, stevia and salt in a mixing bowl and thoroughly mix in apple cider vinegar and sour cream.
    4. Whisk eggs in a bowl and add to the mix ensuring it forms a smooth dough and shape into a circular loaf, score an X into the top with a knife
    5. Bake for 25 minutes or until a golden brown colour.
